Hometown: Chihuahua, Mexico. Age: 39. Training: Nothing formal. I left Mexico at 16 and came to Rochester. Even though I didn’t speak English, I learned cooking from my first boss, Chef Louis Lestos. I watched everything he would do and I learned very quickly. I love to experiment and am constantly creating new flavors. Whatever is in my hands and mind, I make. Would love to cook with: Emeril because he’s passionate. You have to put passion in your food when you cook, so your customer can taste it. Biggest influence: My mother. She cooked for her 14 children and I still call her in Mexico when I need help with a recipe or have a question. She is a very good cook. On recipes: I don’t have any. Everything is in my head. I don’t use cookbooks. Must have: Fresh garlic. It’s my favorite. On spices: I make my own. I mix three or four together in a large pan. I mix with my hands. It’s like talking to the spices. I do this for 10–15 minutes and then taste. Ingredients for success: My wife, son, five brothers, one sister, niece and nephew, we all work together. My brothers are excellent cooks. Dream: To have my own cooking school. I love to share what I’ve learned and teach. I like to have high school kids come to my kitchen and we cook and then they can eat what they make.
