ZOOKERS HERB CRUSTED SALMON By Brent Monsour


Sitting on risotto surrounded by sorrel sauce and topped with mustard cress salad makes this salmon look extra mouthwatering.


Salmon


4 8-ounce salmon fillets ½ cup panko (Japanese style bread crumbs)


1 teaspoon each of chopped, fresh thyme, sage, marjoram and rosemary 2 tablespoons of chopped, fresh parsley


Mix all ingredients except salmon. Salt and pepper to taste. Press one side of salmon fillet into panko mix. Heat a sauce pan and add olive oil. When olive oil shimmers, add salmon. Cook bread crumb side first (always cook presentation side first). Reduce heat to medium. When edges brown flip over (about three minutes) and cook the other side for about five to six minutes.


Risotto


1 16-ounce box of Arborio rice 1 chopped white onion Chicken stock


White wine Salt and pepper 1 tablespoon butter


On high heat, sweat onions until opaque. Season with salt and pepper. Add rice and stir until opaque. Add wine to just cover the rice. Turn down to medium heat, and stir until wine is almost gone. Add warm chicken stock to just cover the rice. Stir continuously until stock is absorbed. Taste. If rice isn’t done, add more stock to just cover, stir and continue previous steps until rice is done. Rice should be al dente all the way through. When done, add two tablespoons of butter.


Sorrel Sauce


1 white onion minced 2 cloves minced garlic 2 cups white wine ½ cup chicken stock ½ cup heavy cream 1 tablespoon butter


3 bunches sorrel chopped, stems removed


Sweat onions and garlic in sauce pan. Lightly season with salt and pepper. Add sorrel and wine and reduce wine by three-quarters. Add chicken stock and reduce by half. Puree. Add cream and reduce until mixture has the consistency to coat the back of a spoon. Add one tablespoon of butter. Run through a fine mesh strainer.


Mustard cress salad


Pick leaves off and discard stems. Wash thoroughly. Toss with a little balsamic vinegar, olive oil and chopped, fresh thyme, sage, marjoram and rosemary to taste. Salt and pepper.
