You can call him a Del Frisco's employee, a friend, or a savior (like Mr. Uh-oh surely did!). Just don't call him "Johnny on the spot.”


Catching a Passing Bus(boy)


Within another nearby steakhouse, The Palm, ten-year veteran waiters heft sizzling strip steaks and mammoth whole lobsters. Trailing behind them is a cadre of staffers who are at the ready, replacing silverware, clearing used plates and pouring water into glasses.


One in particular, Gus Kafetsis stands out. Maybe it's the gentle grace and aplomb he displays, a reflection of over eighteen years in the biz.


Gus has been a busboy all that time, or, in Palm-speak, a server's assistant. He's in his early sixties. He earns minimum wage. So why would a man like Gus work almost two decades in this position?


Palm general manager Jim Haney will tell you: "Gus makes more money in this posi- tion than he would at most other restau- rants waiting tables. He's a customer favorite. Many of our guests ask for him by name.”


Like the bussers who tend to the Kimberton Inn's tables, those who work at The Palm are a rare breed. Like so many other jobs, the server's assistant is one which has also taken a hit due to the poor economy. Why employ extra staffers - a restaurant or a chain's philosophy may be - when you can cut out that portion of pay, and instead, require servers to take on the extra workload?
