CrackerCocktails GREAT FOR CHRISTMAS PARTIES AND ENTERTAINING

Try a Bucks Fizz with a difference, instead of mixing champagne or sparkling wine with orange juice, try mixing it with the juice of satsumas, clementines or tangerines, for a particularly festive flavour. Or how about a Caribbean Christmas cocktail, simply mix chilled champagne with half a teaspoon of creme de banane and half a teaspoon of white rum.

Although it has gone out of fashion somewhat, another cocktail with a real taste of Christmas is a Snowball, it is easier to make than the traditional Christmas drink, eggnog but still has a festive flavour. Fill a tumbler with ice, add one part Advocaat to three parts lemonade and squeeze in a little lime juice to taste.

Nigella Lawson calls this next cocktail ‘Christmas in a glass’, take four parts chilled sparkling wine to one part gingerbread syrup, often available in coffee shops, and just taste Christmas!

For a warming drink for your Christmas party how about hot rum punch, take one pint of rum, one pint of brandy, one pint of lemon juice and three, three to four tablespoons of sugar three and a half pints of boiling water. Mix the rum, brandy, lemon juice and sugar in a punch bowl and then pour on the boiling water and serve decorated with slices of fruit. Irish coffee or other flavoured coffees are also great for warming up a cold winter day, for Irish coffee, put strong sweetened black coffee

into heatproof glasses, add two tablespoons of Irish Whisky to each glass. Hold a teaspoon to the side of the glass with the back facing upwards and slowly pour about two tablespoons of double cream over the spoon so the cream floats on top of the coffee. This can also be done with rum to make Caribbean coffee, Amaretto to make Italian coffee or Grand Marnier to make French coffee.

For the drivers at the party, or people who prefer not to drink alcoholic cocktails, how about a mulled cranberry juice? Put 500ml of cranberry juice with 300ml of orange juice and 300ml of water into a saucepan. Take the juice of half a lemon, four allspice berries, four whole cloves, one cinnamon stick and slices of lemon and orange. Simmer for ten minutes with the juice, but don't let it boil then use a slotted spoon to remove the spices and serve in warm glasses with a slice of fruit. To make mulled wine follow the same recipe using red wine instead of the cranberry juice.

Or mix 300ml of cold Earl Grey tea with 180ml of pineapple juice, 300ml of fresh orange juice, the juice of two lemons, one teaspoon of caster sugar and 600ml of ginger beer. Chill it well and serve with more ice-cubes or sugar if necessary. Cheers and a very merry Christmas!
