Here are some easy recipes, adapted from the CDC “Fruits and Veggies Matter” website.


Lemon-Rosemary Green Beans


4 cups small green beans Cooking spray 1 cup sliced green onions 2 teaspoons chopped fresh or 1 teaspoon crushed dried rosemary 2-1/2 tablespoons fresh lemon juice 2 teaspoons grated lemon rind


Steam green beans in a covered steamer basket over boiling water for 8 to 12 minutes or until crisp-tender. Plunge beans into cold water; drain. Spray a sauté pan with cooking spray. Add green onions and sauté over medium-high heat until ten- der. Add beans, rosemary, and lemon juice; stirring constantly until thoroughly heated. Sprinkle with lemon rind. Serves four.

Black and Blue Berry Smoothie


2 cups blackberries 2 cups blueberries 1 cup fat-free plain yogurt 1 cup fat-free milk 1 teaspoon vanilla extract 2 cups ice


Place all ingredients into blender and blend until smooth. Serve immediately. Makes four servings.
