item here for about ten years.” Presnal first offered the dish when he owned a restaurant on Martha’s Vineyard more than a decade ago. “We would do it there a lot,” the chef said. “It’s something we offer during deer [hunting] season. A few people come back year after year for this dish; it’s an acquired taste.”
The entree is topped with a juniper crust, which Presnal described as having a gin-like flavor. “It’s ginny, and also has rosemary and black pepper flavors,” the chef said. “We use ginger vinegar, which gives it a bite. It’s a red meat that is rich and robust.” He added, “We serve it very fresh, we don’t serve it after about a day.” Presnal said that tartar is raw meat typically served diced, whereas capaccio is very thinly sliced. In this recipe, it is also seared with heat. Extra virgin olive oil, salt and pepper are used to season the dish. He continued about the salad, “It’s a green cabbage salad, with [spherical cut] green and red apples. It’s fresh and light.” Presnal added about the complementing tastes, “They are perfect together.”
