His favorite holiday dish is flavored with imported Italian plum tomatoes, crushed by hand. The sauce is simmered, and then the flavor is enhanced by a French mirepoux, composed half of onions, one- quarter celery and one-quarter carrots. Seasoning this hearty mix are the herbs rosemary, thyme, and majoram. A red wine burgundy is also added. The ribs are submerged in the sauce, then the large pot is covered and placed in a 350- degree oven and slow-cooked for about four to five hours. The final product is garnished by bay leaves, salt and pepper. Figueroa has been with the restaurant for approximately six years. “We like to emphasize seasonal and local that reflect our background of Northern Italian cuisine brought to the next level with an American twist,” he said. “I also try to support other local, independently owned

restaurants and when I go out I tend to find how unique we are in that a lot of restaurants won’t change the menu [from season to season]. I change ours on a consistent basis, and for me that’s what keeps the passion.”

He added, “For example, we offer a lot of light stuff in the summer, no heavy starches. If you happen not to come here for a couple of months, you won’t see the same menu. Those changes throughout the year keep people coming back. We offer fine dining, in a comfortable setting. Everything that comes out [of the kitchen] has to be to my taste and my specifications. That’s why we do as well as we do.”
