Training that’s a cut above the rest


Leeds City College prides


itself on its reputation for provid- ing a broad base of education and training within the meat, poultry and related meat industries. With over 50 years’ experi-


ence, the College’s meat technol- ogy department, based at its Thomas Danby Campus, is one of only a few in the country with purpose-built, high level industry standard facilities.


Craft and technical skills are taught at Danby’s Butchers, part of its commercial deli operation which utilises meat products sourced from local suppliers. Excellent on-site facilities, combined with outstanding levels of staff expertise and experience, enable the College, the UK’s third largest Further Education estab- lishment, to deliver high quality training at all levels both on-site and working in industry alongside independent family butchers and large scale food manufacturers. Courses cover a wide range


of butchery and meat processing skills at all levels and range from IPQ / IVQ courses and apprentice- ships to short courses and master classes for the general public, chefs and meat companies. The College’s Butchery ap-


prenticeship was introduced last year and is going from strength to strength, with 25 apprentices cur- rently on the Level 2 programme


The College has close links with the industry, with current and past employer clients including Asda, Tesco and Morrisons, Q Guild of Butchers and the National Federation of Meat & Food Traders.


The College has recently en-


tered into an innovative partner- ship with leading Italian manufacturer Stagionello @ and distributors W. Weschenfelder & Sons Ltd to become the UK sole contact and training provider for its new drying cabinet which en- ables small scale artisan salami production.


The high calibre of training


provided by Leeds City College is acknowledged by its National Skills Academy status for Food Manufac- ture and Hospitality & Catering, which include the meat technology provision, as well as regular accolades received from the Wor- shipful Company of Butchers and the Meat Training Council and Insti- tute of Meat Awards.
