Mango Ice Cream Loaf


Prep 30 min • Serves 8 2 x medium mangoes peeled & flesh chopped 1x lime juiced 300ml thickened cream 1/4 teaspoon vanilla extract 2 egg whites at room temp A pinch of cream of tartar 1/4 cup castor sugar To Serve; 1x mango 3 x passionfruit pulp removed


1. Line an 8 cup loaf pan with baking paper, leaving a 2cm overlap on the long sides of pan


2. Puree mango flesh until smooth. Combine pured mangoes (approx. 1 1/4 cups)and lime juice in a large bowl. In a clean bowl, whip cream and vanilla together until firm peaks form. Set aside


3. Using electric hand beaters, whisk egg whites with cream of tartar in a large bowl until soft peaks form. Gradually beat in sugar. Continue to beat until mixture is very thick and glossy.

4. Gently fold egg whites and whipped cream into mango mixture until well combined. Spoon into prepared pan. Smooth top, cover with plastic wrap and freeze for 5 hours or until firm. Turn onto a serving platter and decorate with sliced mango and passionfruitpulp.


Coriander, Mint & Chicken Couscous


Prep about 30mins • Serves 6 2 cups couscous 1/3 cup currants 2 cups boiling water 1 barbequed chicken, flesh shredded 4 green onions(shallots) thinly sliced 1 cup coriander leaves, roughly chopped 1/4 cup mint leaves roughly chopped 1/3 cup almond kernels chopped 100g Greek fetta cheese crumbled Lemon wedges to serve Lemon Dressing; 1/4 cup lemon juice 1 tsp lemon zest 1 garlic clove, crushed 1/3 cup extra virgin olive oil Salt and ground black pepper


1. Place couscous and currants into a large heat proof bowl. Pour over boiling water, cover and set aside for 3 mins until water is absorbed. Flake grains with a fork to separate.


2. Add shredded chicken, green onions, coriander, mint, almonds and fetta to couscous. Toss to combine.


3. To make lemon dressing combine ingredients in a screw top jar. Season with salt and pepper. Shake until well combined. Drizzle dressing over couscous. Gently toss to combine. Serve with lemon wedges.
