Raimondo Winery on Lake Norfork, Arkansas Basil-Ricotta Spread

This easy spread has an aioli-like consistency but uses no eggs. The fresh, part skim ricotta gives it a creamy-dreamy texture and richness. Toast bread and liberally slather for a magnificent snack or appetizer and equally delicious as a mayonnaise replacement, a dip for crudités, or spread fresh grilled salmon.
