s of this week, Jed Lazar and Shauna Lambert of SoupCycle have successfully delivered 37,000
soups, all on two wheels. When the pair launched the soup-by-bike delivery service in the summer of 2008, the business plan initially seemed a little wobbly: Really? People living in “Souplandistan” (inner Portland) will pay $10 a quart to have soup delivered to their doorstep or desk every week? Okay, you crazy kids, have fun. But the venture took off, growing to over 400 “soup-
scribers” and eight employees. Their all-organic soups beat out pizza, coffee, and weed-by-bike companies to win the “best service delivered by bike” in town. Sure, there are challenges to delivering soup by
bike (the delivery trailers weigh 215 pounds when loaded with 40 soups, 20 salads, and 100 breads) but Lazar says it helps them meet new customers and keep down costs. “We looked at delivering by car, van, even by Zipcar,” says Lazar. “But soup delivered by car is just not very memorable.”
The most popular soup right now? Lazar says, “pizza soup,” a blend of Italian chicken sausage, ol- ives, mushrooms, and baked gnocchi. That’s worth pedaling miles for—but it’s even tastier when some- one else does all the work. ★ SoupCycle, 320-9610,
