Executive Chef Scott Sauer presides over a menu that ranges from delicate to hearty fare, all in a French-inspired California cuisine style. Max’s also boasts an impressive and ever-evolving wine list. Scott generously shares his Grilled Rib Eye recipe as a spicy match for our 2007 Petite Sirah, Jardine.
Chef Scott Sauer’s Grilled Rib Eye with Spiced Wine Reduction Enjoy with 2007 Petite Sirah, Jardine
Wine Reduction Ingredients & Method 1 bottle of red wine 1 cinnamon stick 1 pint blackberries 1 cup sugar 3 pieces star anise
Put all ingredients in sauce pan bring to boil. Reduce to a simmer. Simmer till reduced by ½ to and cool.
Main Dish Ingredients & Method (serves two) 2 rib eye steaks 2 lbs peeled potatoes (preferably Yukon gold) ½ cup sour cream salt and pepper ½ lb green beans 1 cup buttermilk ¼ lb soft butter
Boil potatoes until tender then drain and mash. Add butter, buttermilk, sour cream, and salt and pepper to taste. Add horseradish, mix well. Blanch green beans in boiling water until tender. Grill rib eyes to desired doneness. Plate mashers and green beans, place rib eye on top and drizzle with reduction sauce. Serve with 2007 Petite Sirah, Jardine.
Enjoy an Operatic Pairing of Wine and Food at Vina Robles Join us for an evening of fine wine, food and music on September 27 as the Pacific Repertory Opera presents “Opera in The Vineyard” featuring classic opera, operetta and musical theater. The cost is $45 for table seating and $35 for general concert seating. You may also opt for a wine pairing with hors d’oeuvres ($25) or a full dinner with wine pairing ($40). Wine will also be available for purchase by the glass. Celebrate “Swiss Days” During Harvest Weekend Join us for our third annual “Swiss Days” at Vina Robles on October 16 - 18 as part of the Paso Robles Harvest Wine weekend. On Friday, October 16, we will kick things off with a “Petite & Pork” party featuring barbecued pig paired with our newly released 2007 Petite Sirah along with live music from 6:30 to 8:30 p.m. Cost is $35 per person, $30 for Signature Wine Club members. For tickets, please call us at (805) 227-4812. Celebrating our Swiss heritage, the weekend will feature complimentary Swiss fare at our tasting room from noon - 4 p.m. on both Saturday and Sunday. We will also be offering wine specials throughout the weekend.

Get in The Groove with Concerts at Vina Robles Our second annual Vina Robles Concert Series has already generated a lot of good vibes, but it’s not over yet! Two more concerts remain on the schedule before the season ends, so put on your dancing shoes, pack a picnic and join the fun. As always, the concerts will be held at our Hospitality Center’s lawn overlooking
the surrounding vineyards or in the Jardine Court. For tickets and details, please call (805) 227-4812. Following are the final two concerts of the season:
September 25 – Soulamente - $22 / $20 for Signature Wine Club members Dance hits from the ‘70s through the ‘90s with a funk-inspired edge and flavors of blues, soul and Latin jazz.
October 23 – Julie and The BadDogs - $15 / $13 for Signature Wine Club members Julie Beaver picked up her first violin at the age of five and hasn’t stopped fiddling since. From Bach to Blues to Bluegrass, she can play—and sing—it all.
