2005 Cabernet Sauvignon While Paso Robles has become an epicenter for Rhône varietals over the past decade, Cabernet Sauvignon remains the region’s dominant grape, and similarly a cornerstone of our portfolio. The 2005 vintage comes from premium clones 6, 15 and 337 at our estate Huerhuero Vineyard. After hand picking and destemming, approximately 55 percent of the lot was left as whole berries during fermentation to preserve varietal character. The wine was aged for 19 months in French and American oak barrels. Petit Verdot (23%) was incorporated into the final blend for enhanced color, depth and structure.
Tasting and Pairing Notes Our 2005 Cabernet Sauvignon begins with warm aromas of black cherry, plum, cassis and tobacco spice. The palate is round and juicy, with layered flavors of black cherry, blueberry and cassis. Toasty vanilla accents accompany bright tannins on a balanced finish. Recommended pairings include filet mignon with portabella mushroom, roast pork loin with rosemary and aged gouda cheese.
Vineyard Cabernet Sauvignon naturally ripens late, which is why it excels in our estate Huerhuero Vineyard on the southeast border of the city of Paso Robles. Here, the grapes enjoy a daily interplay of warm seasonal afternoons and cool marine air entering the region from the Templeton Gap, a notch in the coastal mountains. These conditions enable the varietal to reach full physiological ripeness at a steady pace, resulting in a fully defined wine with excellent structure.
2006 Petite Sirah – Jardine Petite Sirah is a very important varietal for us, as Paso Robles offers ideal growing conditions for this grape. The 2006 Petite Sirah comes from our estate Jardine Vineyard (49%) and nearby Penman Springs Vineyard (51%). It offers lush aromas of blackberry, blueberry and spicy incense. The palate unfolds with juicy flavors of black cherry, boysenberry, cedar and mocha. Hints of sweet oak and supple tannins unite on a long finish.
