Chef David McMillan’s Seared Venison Carpaccio Enjoy with Vina Robles 2006 Zinfandel Ingredients (serves four as appetizer)


6 oz. venison loin 1/2 tsp juniper, crushed 1/2 tsp black pepper 1/2 tsp Kosher salt 2 oz. balsamic vinaigrette 3 oz. rosemary aioli 4 oz. caramelized onion 4 oz. baby arugula 1 tbsp rosemary, fried Sel gros 4 crostini


Method and Presentation Rub venison with salt, pepper and juniper. Sear to rare in a hot sauté pan with a little neutral oil. Chill if desired. Slice venison as thin as possible. Toss arugula with balsamic vinaigrette and place on each plate. Place venison in a shingle-fashion over arugula. Scatter onion around venison. Drizzle all with rosemary aioli and scatter sel gros and fried rosemary leaves. Serve with crostini.

Spring Brings Concerts, Dance Lessons Get in the groove this spring as Vina Robles introduces weekly dance lessons and monthly concerts that will continue throughout the year. On Thursday nights from 6 p.m. to 7 p.m., local instructor Blake Kownacki will teach

Join Us for The Paso Robles Wine Festival The annual Paso Robles Wine Festival weekend on Friday, May 16 through Sunday, May 18 is a perfect time to visit our dynamic wine country.
