Everymonth the St Albans branch of Waitrose donates £1000 between three local good causes that customers choose.
Howdoes itwork? At the checkout you'll receive a token, which you then place in the box of the good cause you'dmost like to support. Themore tokens a cause gets, the bigger the proportion of the £1000 it receives – but as long as it has received some tokens, each cause gets some help. You can also nominate good causes to be considered for the scheme in the future. Just pick up a leaflet in store formore information.
Ingredients
250g plain flour 2 tsp baking powder 1 tsp bicarbonate of soda 1 tsp cinnamon 100g butter 125g golden caster sugar 2mediumessentialWaitrose free range eggs 150g natural yogurt 400g essentialWaitrose rhubarb, cut into 2cmlengths 50gmacadamia nuts, roughly chopped 50gwhite chocolate, broken into small chunks
How tomake
1 Preheat the oven to 180ºC, gasmark 4. Sift 200g of the flourwith thebakingpowder,bicarbonateof sodaand
thecinnamonintoalargemixingbowl.Rubin75gof the butter until the mixture looks like coarse breadcrumbs and stir in 100g of the sugar. Beat the eggs with the yogurt thenbeat intothedry ingredients tomakeasoft mixture.
2 Spoon the cakemixture into a buttered and base-lined baking tin, about 28x18x4cm, and smooth the surface. Top with the rhubarb. Rub the remaining butter and flour together and stir in the rest of the sugar. Add the chopped macadamia nuts and the white chocolate chunks. Scatter over the rhubarb.
3 Bake for 35–40 minutes until well risen and a skewer inserted into the centre of the cake comes out clean. Turn onto awire rack to cool. Servewarmin sliceswith Waitrose Seriously Creamy Madagascan Vanilla Ice Creamor leavetocoolandstoreinanairtightcontainer.

Helping local causes One of the recipients of recent Community Matters donationswas local charity Earthworkswhich offers exciting activities in conservation and horticulture to local people, particularly thosewhomay be disadvantaged, such as thosewith learning difficulties ormental health problems. Traineeswork on one ormore days aweek at the Hixberry Lane site, learning usefulwork- related skills as part of amixed-ability team.
Other local recipients have included the WildlifeWatercress Associationwho received £307 (pictured accepting their cheque), St Albans and HertsmereWomen’s Refuge, St Albans Bereavement Network,TheWoodland Trust and Herts Air Ambulance.
