INGREDIENTS (Serves 4 as a snack) 12 chicken wings (cut in half and tips removed) 2 tablespoons of soy sauce 2 crushed cloves of garlic 2 tablespoons of fish sauce 1 teaspoon of fresh black ground pepper 1 tablespoon of sugar 2 tablespoons of sesame oil 1 teaspoon of salt 2 tablespoons of fresh lemon juice 1 teaspoon of fresh chopped chillies 2 teaspoons of chilli sauce ½ onion (cut into chunks) 1 tablespoon of cooking oil

RECIPE – SPICY CHICKEN WINGS


It seems that the nation’s favourite poultry is chicken - so yes, as promised, this month’s recipe is ‘SPICY CHICKEN WINGS’.


METHOD


Place the chicken wings, garlic, soy sauce, fish sauce, black peppers, sugar, sesame oil, salt, lime juice, fresh chillies, chilli sauce and onions into a large bowl. Toss all the ingredients well and then cover and refrigerate for 2 hours.


In a big deep frying pan add the cooking oil and turn up the heat until it’s hot enough to add the chicken wings but be very careful when adding the wings – this needs to be done slowly and gently - do not throw them in as the oil may spit and spat.


Cook the chicken wings on a high heat for around 10 minutes until the chicken is crisp and golden. Once cooked, take the chicken out, set aside on top of kitchen towels and pat down to get rid of oil traces.


TO SERVE


Divide and place chicken onto a plate and build up on top of each other.


To complement the chicken add fresh side salad with simple vinaigrette dressing
