While many of us consider adopting such a course-altering changes to be too impractical to suit our “busy” lives, mothers


everywhere dutifully take on mountains of tasks for the good of their progeny—and they still manage to pull off some exceptional grub in the process! How do they do it? To honor Mothers Day 2011, here is a compila- tion of heartwarming recipes that have either been handed down or inspired by mothers I’ve had the privilege of knowing.


SOOTHE THE SOUL


Sopa de Fideo – Tomato-Chicken Noodle Soup Some include chili powder, cumin, blanched vegetables, green onion, cilantro and even lime juice, but my mother kept it simple— and she always knew how to make the rainiest day fade away with a steaming hot pot of fideo.


INGREDIENTS: 1/2 Yellow Onion, sliced thinly into rings 2 Cloves Garlic, minced 2 Ripe Tomatoes, seeded 1 Quart Chicken Stock or Broth 4 oz Tomato Paste 1 package Fideo or Vermicelli Salt and Pepper as needed Vegetable Oil as needed


METHOD: • In a medium sized pot, heat a coin-sized amount of oil on medium heat and add onions. Sauté until softened and just browning. Add garlic and continue sautéing for a minute. • Add package of fideo to pot and add enough oil to lightly coat it. Toss until fideo is golden brown. • Add tomatoes and tomato paste. Let them pince, or caramelize, on the bottom of the pan for a minute before mixing evenly among the fideo. Then add stock to deglaze pot. Stir well. • As fideo absorbs the stock, you may add more to achieve your desired consistency. Some prefer it soupier, others prefer to reduce the liquid to a spaghetti-like texture. Whichever you choose, don’t overcook the pasta. • Once consistency is reached, season to taste and serve right away.
