„Fusion‟ Recipes from our readers
Very often, we are in situations where we are short of the usual ingredient or, because the vegetable that we usually use is not available here, we use a new ingredient and there born is a wonderful serendipitous recipe. Sometimes, if we like some taste in another cuisine, we incorporate some elements of that to suit our taste and give it a special, personal touch. Let us call these the ‗fusion‘ recipes ! The recipes we have received from our readers also emphasize that recipes are not just methods but a cook’s imagination and experience ! You could make upma with oatmeal, pack cranberry puliyodarai and kale poriyal for your next picnic, or enjoy a sumptuous dinner with a totally new appetizer and a refreshing mutter tofu masaala!

PROCEDURE: 1. Prepare Maggi noodles as per pack instructions. 2. Allow it to cool.
3. Then add onions, green chillies and besan flour and mix them all together.
4. Add salt if needed. 5. Heat the oil for frying. 6. Take small portions of the mixture, and fry them until crispy.

Tofu (cut into 1/2 ”cubes) Peas
Onion (finely chopped) Ginger garlic paste Turmeric
Garam masala, pepper powder, cumin powder
Coriander powder Tomato sauce
Salt and chilli powder Evaporated milk
I N G R E D I E N T S 1 cup
1 cup 1 no.
1 tbsp 1/2 tsp
1 tsp each 1 tbsp
1/2 can (16 oz.) To taste
1/2 small can (3 oz.) PROCEDURE:
1. Melt some butter in a pan and add turmeric powder, garam masala, coriander powder, chilli powder, pepper powder and cumin powder.
2. Mix them well and then add ginger garlic paste. Sauté for a few minutes.
3. Add the onions. When they are cooked, add the peas (previously microwaved) .
4. Add the tomato sauce and let it cook covered for 5-10 minutes. 5. Similarly, add the evaporated milk and let it cook. 6. Add salt and let it boil uncovered for 5 minutes.
7. Finally, add the paneer cubes and leave it on a low flame for a few minutes and its ready to serve.

Variations Use paneer instead of tofu to make mutter-paneer masala and red pepper, green pepper, and mushroom along with, or instead of, peas. Grind almond and cashews and add the paste after instead of the evaporated milk to make the gravy more thick.
