Timber’s Inn 6555 Belding Rd. NE. 616-874-5553 AMERICAN. Never mind that it’s located behind a strip mall, Timber’s pulls off the hunting lodge atmosphere pretty well. The portions are hearty and the menu is stocked with pizzas, burgers, steaks, fish, wild game and ribs.

PERFECT PAIR: Arcadia Brewing Company’s Osso Bucco + India Pale Ale

FOR SOME BARS AND PUBS, feeding customers still involves breading a vegetable, meat or dairy product and then dunking it in boiling, 375-degree oil. Battle Creek’s Arcadia Brewing Company, which makes British-style beers and ales, is trying to inject more “gastro” into the pub business. “I don’t have a single deep fryer

here,” says Arcadia’s award-winning Executive Chef Sean Kelly. Honored for his cooking by the Battle Creek Enquirer as the “Best of Southwest,” the veteran chef has added several unexpected foodie items to the menu since joining Arcadia last year. Take, for example, his osso bucco

entrée. Kelly uses a pork shank, as op- posed to veal, because it offers more flavorful shank for the buck. He braises it for a couple of hours in the oven, and then finishes it in Arcadia’s wood-fired oven, rotating the shank to the flames in order to caramelize and give it a crispy finish. He rests it on a mound of mashed potatoes, drenching it in a slightly sweet,

tangy sauce made with red wine vinegar, raspberry jam, Arcadia’s Scotch Ale and fresh rosemary. Putting fork to shank, the meat falls off the bone with even the slightest prodding. While pairing it with the Scotch Ale

might be a first thought, Kelly goes in another direction. “Just because you’re cooking with

a beer, that doesn’t mean it’s the best pairing for the dish,” he says. Instead, he recommends Arcadia’s IPA. The copper- colored brew pours with a slight head and a bit of lacing, hitting the nose with floral hops and a trace of citrus. Taste wise it’s hoppy and slightly malty, with a citrus tone that “balances out the sugars and plays along with the shank’s sauce,” Kelly says. Between the beer and the bucco, there’s a great balance of sweet and spice that doesn’t overwhelm as you trade bites and sips. —Brian Edwards

The hippie décor, trading floor lingo, throw-from-the-counter tip jar and pizza boards are all part of the experience, but as President Bill Clinton might have said: “It’s the hot dogs, stupid.” The steamed buns and generously sloppy toppings keep people coming back, especially at 2 a.m. when the bar crowds at nearby Billy’s and Mulligans let out. Editor Lindsay Patton describes Yesterdog’s charms this way: “It’s so chill and laid-back…and everyone who works there is grouchy.”

Twisted Rooster 1600 E. Beltline. 616-301-8171 ECLECTIC. The former chain restaurant has been “unchained” into a unique independent restaurant serving classic comfort foods with a twist. The lobster mac-and-cheese is a new “to-die-for” dish in the GR area and the barbecue rates highly with REVUE Food Writer Matt Simpson Siegel. The menu changes seasonally and focuses on using local suppliers. The lounge is comfortable, featuring live music once a week.

The Winchester 648 Wealthy St. SE. 616-451-4969 ECLECTIC. Upscale Wealthy Street bar and restaurant feels like it was plucked from Chicago’s Bucktown or Logan Square neighborhoods. A comfortable spot to drink or dine, with an always evolving menu featuring shared plates, salads and inventive sand- wiches. The Cuban Reuben, originally created as something of a joke, remains a (very tasty) staple item.

While we categorize it as “Italian,” that’s a bit limiting for this downtown Holland spot, which specializes in creating in- ventive pasta dishes. Housed in an old industrial building, 84 East is a favorite splurge spot among REVUE’s Hope College minions (or, alternatively, the place they ask their parents to bring them when visiting). 84 East also serves up designer pizzas and a few non-pasta house specialties like Pork Marsala and Mahi Mahi.
