Compiled by more than 800 panelists in 26 regions of the world, the S.Pellegrino World’s 50 Best Restaurants Awards have named the following restaurants as their 2010 top 10. businesslife.je takes a look at what the crème de la crème of haute cuisine has to offer

NOMA For those in the know, Chef Rene Redzepi’s colossal achievement in winning the World’s Best Restaurant Award aged just


32 is no surprise, with Noma quickly establishing itself as a place of pilgrimage. Rated two stars by Michelin and situated on Copenhagen’s dockside in a stylishly converted 18th-century shipping warehouse, most dishes are served by the chefs themselves. Noma leads the trend in ‘cold climate cuisine’ and is famous for taking truly seasonal and local ingredients – many of which are unheard of outside of the Nordic region – and creating dishes such as radishes in edible soil that acutely demonstrate nature on a plate. Great restaurants are a blend of sophisticated cooking, imaginative ideas and respect for ingredients. Noma is more than this according to the panel – it reminds you why some restaurants deserve to be revered.

EL BULLI Frequently referred to as the founder of molecular gastronomy, Chef Ferran Adrià’s willingness to share his


knowledge means his influence now spans the globe. He continues to tear up the fine-dining rule book, presenting customers with avant-garde food that often defies description, and maybe even the laws of physics too. Open just six months a year, from June to December, only 8,000 diners will be lucky enough to secure a reservation out of the million or so who request one. Adrià has since announced that El Bulli will be closed to the public for two years from 2012 to allow him time to work out what comes next. El Bulli has three Michelin stars and has won the S.Pellegrino World’s 50 Best Restaurants Award no fewer than five times in the last decade, earning Adrià the accolade of Chef of the Decade in 2010.
