| Industry News Waterstone’s rolls out 5th View concept

“It is kind of like the batcave. After a few months we’d transformed it into a headquarters to fight crimes against speciality coffee. We have trained an elite army of baristas there and dispatch them to a network of shops around the country. We also play a ton of Xbox and eat dozens of pizzas” p.32

Following the runaway success of its flagship 5th View Bar & Food venue in London’s Piccadilly, Waterstone’s has introduced the concept to stores in Manchester and Cambridge. The UK’s leading high street

bookseller has commissioned Elior UK, its long-term catering partner, to tailor the concept to appeal to locals, shoppers and bookstore users in Manchester’s Deansgate and locals, students and office workers in Cambridge. “The refurbishment of 5th

View has been a phenomenal success and Waterstone’s has invited us to implement the new style in its other flagship stores,” said Michael Audis, CEO Elior UK and Ireland. “The two new outlets show our continued commitment to Waterstone’s. We’ve worked in partnership to create venues bespoke to the demographic of each area and the modernisation of their stores. Our aim is to encourage more customers to use Waterstone’s by providing fantastic food, free wi-fi and a mix of comfy corners to relax in, as well as more formal dining areas to enjoy a sit-down meal.” 2nd View Coffee Shop in

Footprint Awards 2011 another

The organiser of a new awards scheme to celebrate sustainability and environmental excellence in the foodservice industry has called on entrants who focus on what can be achieved beyond the industry as opposed to what it calls the tradition of “dress codes and discos at the winner’s dinner” for its 2011 event. “Whilst many awards create

good recognition within their sectors, we want the Footprint Awards to demonstrate more widely what an industry can do when the companies and individuals that work within it decide to act to protect and sustain the environment,” said Charlie Miers, managing director of organiser, the Footprint Media Group. “What makes these awards

possible is that there is a great deal already being done in foodservice, much more than many people realise, and the awards will provide recognition for such activities,” continued Christophe Stourton, event

rolls at breakfast time, deli-style sandwiches, soups and stews at lunchtime and an afternoon offer of coffee and cakes. All dishes will be prepared freshly on site and the casual design of the café will appeal to locals, students and regular users of the store. 2nd View Bar & Food in

Deansgate will offer barista- made coffee and cocktails in informal surroundings as well as a more formal dining area for those who wish to enjoy a sit down meal from an extensive menu which features meze, seafood, charcuterie and antipasto sharing boards, as well as traditional favourites such as fish and chips and beef burgers. www.elior.co.uk

director of Footprint Experience. “These awards aren’t just slap-on-the-back-

programme to make an industry feel good about corporate social responsibility, they are a serious attempt to encourage companies and individuals responsible for our food pipeline to be more sustainable - it’s not just desirable, but necessary.” The initiative is supported by

some of the biggest names in the industry. Neil Stephens, managing director of Nestlé Professional, explained the decision to become headline sponsor of the awards, “With sustainability at the very

heart of our business, we are passionate about supporting the foodservice industry to make a difference within this inspiring and vitally important area.” As part of the awards process

sponsors will be asked to provide a student internship, which will see students undertake research that will inform the whole industry’s sustainability effort.

Christophe went on, “The

internships will help achieve another of our key objectives - to get the best new talent and innovation into sustainability in foodservice. This will give the awards a legacy, building support for sustainability in foodservice and creating awareness of what can be achieved by an industry conscious of its impact on the environment.” Entries into the awards are

being invited from October 4, 2010, and winners and runners- up will be announced during May 2011. www.foodservicefootprint.com/ awards.
