circles. 5. Place the fondant circles over the blobs of green tea icing on top of the cakes and smooth down gently, ensuring the edges of the fondant circles are tucked neatly inside the cupcake cases. 6. Wrap up the excess pink and blue fondant in clingfilm to use later. 7. Divide the other half of the fondant block up into rough pieces and colour them black, dark brown, light brown, green and orange using combinations of the sugarflair colours and leave some of the fondant white. 8. Make the sushi decorations by first rolling the green fondant into a small thin sausage on the non stick mat. 9. Roll out some white fondant using the non stick rolling pin to

about 8mm thick and wrap around the green. Trim any excess and roll it on the mat gently to make the two fondants adhere to each other. 10. Roll out the black fondant very thinly. You might find it easier to work with if you allow it to dry a tiny bit so that it loses a little of its stickiness. Wrap around the white fondant, trim any excess and roll gently on the mat to make sure each layer of fondant adheres. 11. Very gently, cut through the fondant sausage to cut 4 pieces of your sushi using a very sharp knife. If the fondant sausage shape flattens from cutting just roll gently on the board to reshape. Leave the four pieces to air dry overnight on the foam mat. 12. Make the chopsticks by rolling out the light brown fondant to 5 mm thick and cutting into two thin stick

shapes about 5 mm wide and 70 mm long. Leave to air dry overnight on the foam mat. 13. Make the large cherry blossom flower by rolling out the left over pink fondant thinly and cutting with the rose cutter. 14. Transfer the flower shape to a very small dipping dish, wine glass or something similar (about 50 mm diameter) and form the cut out shape into a flower. The sides of the dish or glass will hold the petals up while the flower dries. 15. Form 5 small balls with the white fondant and place in the centre of the flower. Allow to dry overnight. 16. Lastly, make the small cherry blossom tree decoration by using the small blossom plunger cutter to cut out 4 little flowers from the pink fondant and press them out onto the foam mat.
