1/2 lb organic, whole wheat orzo 3 stalks organic asparagus, bottoms trimmed and cut into 1/2-inch pieces 3 ounces organic frozen peas, thawed (if using fresh peas, boil them until tender, about 5 minutes, and cool immediately)


2 ounces organic scallions, thinly sliced 2 ounces organic carrots, shredded 1 Tbsp fresh dill, chopped Juice of half a lemon Zest of half a lemon 1/2 cup olive oil


Sea salt and freshly ground pepper, to taste


Bring a large pot of water to a boil and add a couple of healthy pinches of sea


salt. Drop the asparagus in the boiling water for 20 seconds, remove it with a slotted spoon and immediately place it in an ice bath or under cold running water to cool it. Keep the large pot of water boiling, drop in the orzo, and cook it according to the directions. Then strain the orzo, flush it with water to quickly cool it, and let it drain.


For the dressing, whisk together the dill, lemon juice, lemon zest and olive oil until combined. Season with salt and pepper to taste.


To serve, toss together the orzo, veggies and dressing. Enjoy!
