At Thai Dressing, formerly Thai Pots, the food is a blend of Indian, Chinese and European infl uence and “Thai ingenuity.” Thai Dressing’s fare utilizes fresh, high- quality ingredients, as well as distinct spices and cooking techniques that make it stand apart from other Asian cuisine. Along with seasoned chili pepper, fresh mint, lemongrass, kaffi r lime leaves, lime juice, garlic, basil leaves and herbs, curry is a common ingredient, although it’s a different blend than that found in Indian food. “It’s very smooth, balanced spices and herbs,” the chef

fi ery foods, but he says Thai isn’t all about spicy. “Since we cook to order, we can accommodate different levels of spiciness and even allergies.”
There are several herbs and spices known to have
benefi cial effects when consumed on a regular basis, explains Hall.
“Chilies are good for your heart and insulin levels,” she says. “Capsaicin is derived from chilies and is also used as an anti-infl ammatory and topical pain reliever. Lemongrass is said to be good for arthritis, headaches and stomach pain.”
As with other Asian cuisine, Thai meals are traditionally communal, with two or more diners sharing several dishes, including steamed rice, and accompanied with Thai tea. Pad Thai, with its fresh rice noodles and

signature sauce, is the restaurant’s most popular dish, but diners are urged to explore the menu. “We ask the fi rst timer what they’re looking for,” the chef says. “We try to encourage groups to order a variety of food and kind of sample everything.”
