Indian restaurateurs in the UK are having to emphasise cultural references to make them stand out from their competitors in an increasingly crowded market, accord- ing to research carried out by All India Arts. Despite the nation’s insatiable appetite for Indian cuisine, the contin- ued rise in the number of Indian restaurants opening in the UK is pressuring restaurant owners to offer custom- ers more than just a plate of food. Khurshid Malik, owner of Shenaz, Scotland’s oldest run- ning Indian, suggests, “It is the responsibility of the res- taurateur to ensure that the dining environment is fresh and inspiring. A key attraction of Indian dining is the venue and environment itself, but it is only those restaurants that provide cultural music, use rich, vibrant Indian colours and fabrics and of course hang historic and traditional art paintings that create a culturally referenced and magical dining experience that is essential in achieving the neces- sary standout in such a crowded market.” Ram Agarwall, Founder of All India Arts, adds: “Restaurant owners must ask themselves, how we get ahead? Food and service aside, how the restaurant looks and what is in it play a key part in allowing customers to relax and con- nect with the venue.”
