towards a commercial style than craft brewing. He’s currently making


small test batches while keeping his brewing skills sharp by working with Will Gilson at the Moat Mountain Brew Pub in Conway, where his former boss and mentor Richard Young is also putting in some time. Within the next few


weeks he expects to fly to Japan to finalize the purchase of a small eight and a half barrel German style brewing system and hopes to be producing his own beer by the end of August. “We’ll market locally,


within a small radius, and will be making our own de- liveries with retail sales at the brewery. We’re looking at having the right-sized

operation which will keep us from having to spend a lot of money to increase capacity. My idea is to em- brace the limits of a small micro brewery and live within them. I can’t begin to tell you how many craft brewery operations went belly up because they tried to expand beyond their natural market and went into debt that sank them,’’ says Davis.


Hallerteau hops are being grown for use at Prodigal Brewing Company in Effingham.
