hot. You should be able to hear the steak sizzle as you place it on the hot surface of the grill. The heat sears the meat and traps the juice inside. Your steak will remain juicier and more flavourful if you are not repeatedly puncturing the meat with a fork or a probe. Use the long handled tongs or a spatula to turn steaks and this will prevent all the juices from escaping. Take the steaks off the grill the

second they are done and serve. Resting a steak too long will dry out the meat. Try this test: cut a steak in half right off the grill and let a second steak rest for five minutes and then cut it. See which one is juicier.
