For those intending to become professional chefs. The course is taught in the realistic work environment of the College’s kitchens and restaurants. The course includes all aspects and methods of food preparation and cooking in the kitchen, larder and patisserie. Entry requirements: at Level 1: 2 GCSEs at E to G to including English. You should have 3 GCSEs at D or above or equivalent qualifications for an invitation to a practical interview and tests to this Level. Level 2: Level 1 qualification in Hospitality & Catering. Level 3: Level 2 in Hospitality in Catering plus a practical demonstration of your skills. Please note: Level 3 is a complex, demanding course. Purchase of equipment, uniform and course trips levy is required at the beginning of the course. These will be discussed at the interview.

You will be assessed using a multi-skill portfolio that includes Food Preparation and Cooking and Food and Drink Service. Entry requirements: at Level 1: 2 GCSEs at Grade E to G to include English. Level 2: NVQ Level 1 qualification in Food Preparation & Cooking or equivalent. Purchase of equipment, uniform and course trips levy is required at the beginning of the course. The required qualification for anyone who is the Designated Premises Licence Holder, for all premises serving alcohol and/or hot food after 11pm. It is recommended for anyone wishing to work in the licensed trade and hospitality industry. You will study a number of aspects of licensing law including: Liabilities of the Licensee, Permitted Hours, Young Persons, Licensee’s Right to Eject, Licensee’s Right to Refuse Service, Public Entertainment, Weights and Measures, Social Responsibilities including Drugs, Dealing with Violence, Proof of Age. No entry requirement. Fee includes refreshments and lunch. Exam is taken the same day.

This qualification replaces the CACHE Level 3 Diploma in Child Care and Education and prepares you to work unsupervised, or in a supervisory capacity within children’s services. Course includes practical placements, development from conception to 16 years, the care of children, promoting health and safe environments for children, play and learning as well as Key Skills. Entry requirements: At least 4 GCSEs at Grade C or above including English Language or a Distinction in the CACHE Level 2 Certificate in Child Care and Education or equivalent; or an overall BA* Grade in the new CACHE Level 2 Award/Certificate/Diploma in Child Care and Education or equivalent. A successful interview and reference are also required.
