Atul all at sea

Michelin-starred Atul Kocchar’s latest venture, Sindhu, is very different from others he has started, as it is at sea, onboard P&O’s latest cruise liner, Azura.

The restaurant has a unique menu and an open plan kitchen, theatre-style, where passengers will be able to see dishes being cooked in front of the guests. It also has a small area serving Indian street food, or nashta. The nashta menu is more casual, enabling people to come in whenever they want to sample a variety of small dishes, perhaps with a glass of wine.

Dishes on this menu include okra bhaji with chilli- honey dip, lentil dumplings with coconut chutney, sirloin steak kebab in coconut sauce and Sarawak pepper jelly. On the main menu, guests can try cod cakes with mint and tamarind chutney, crisp fried spicy lamb salad, pan-grilled chicken fillets in cori- ander marinade, pan-roasted beef tenderloin with coriander salt chips, pan-fried sea bass with chilli mash and coconut sauce.

The restaurant features dark wood finishing, red fabrics and marble counter tops, as well as artwork from the up and coming Pakistan artist, Halima Cassell.

Atul has a restaurant, Vatika, near Azura’s home port of Southampton, and that means that when the ship is back in port he can easily make changes as required. Atul has also studied the ship’s itiner- ary so that local ingredients can be used and the menu tailored to reflect the actual regions the ship is visiting.

Azura was christened by the prima ballerina Darcey Bussell at a ceremony in April at Southampton docks, prior to her maiden cruise to the Mediterranean. Over 1,200 guests were on board including Atul Kochhar, wine expert Olly Smith who has a designer wine bar on board, GMTV presenter Emma Crosby, Strictly Come Dancing stars Tom Chambers, Camilla Dallerup and Craig Revel Horwood, Angela Griffin, parliamentary candidate Esther Rantzen and comedian Johnny Vegas.

Atul has confirmed that he will personally be onboard for four Azura cruises between July 2010 and February 2011. These are July 23-26; August 15-18th; September 21-24th; and Feb 12-15th.
