MAKE: Easter Mini Cakes

Delight your family or friends with sweet little simnel cakes, decorated with flowers in Spring colours. These mini cakes would also make a great alternative to a tiered cake at a spring wedding. They will keep for about a month and make great gifts bagged in cellophane and tied with a ribbon.

Ingredients

6oz self-raising flour 1/2 tsp mixed spice 2oz ground almonds 4oz brown dark brown sugar 2 eggs 2T milk 4oz currants, picked through to remove any tiny bits of stalk 4oz sultanas, picked through to remove any tiny bits of stalk 4 oz raisins, picked through to

remove any tiny bits of stalk 2oz glace cherries, halved 2oz mixed peel 2.75lb marzipan 2.2lb fondant icing 1.75oz flower paste icing Sugarflair food colouring in spruce green, melon, grape violet and pink

Extra Equipment

Set of mini cake tins, or make your own from 4 half-can tins (NB. If you choose to make your own baking tins, you must use a tin opener that will completely cut the top off the cans rather than leaving a ring. Empty the cans, wash thoroughly and dry) Brown paper Foil String Baking tray Plastic mat

Non stick rolling pin A large 5-petal “rose” flower cutter, A small “blossom” cutter A large rose leaf cutter A clean egg box 1/3” / 1cm yellow ribbon

To Make the Cakes

This recipe makes four mini cakes 1.

2 / 150C / 130C fan. 2.

Preheat the oven to gas mark Line the mini tins with

greaseproof paper by cutting a circle to fit the bottom of the tin and a tube of paper to go around the sides and then grease.

3. If you are using your own DIY

tins, fold a double layer of foil around the outside, double the height of the can, and then do the same with brown paper. Tie with string.
