In Japan, sushi making is considered an art form, and the best “sushi–gen,”
chefs trained in the artistry of the knife and knowledge of how to select,
prepare and serve the finest fish, are often considered superstars. Japanese
people prefer to dine out for sushi, leaving its preparation to the professionals;
and Japan has thousands of sushi bars to satisfy the need.
