BEST EVER ZUCCHINI SLICE
375g zucchini, grated (unpeeled)
1 large onion, peeled and finely chopped
3 rashers bacon, rind removed and chopped
(omit for vegetarians)
1 cup grated tasty cheese
1 cup self raising flour
1/2 cup oil
5 eggs
pinch salt and freshly ground black pepper
Place all ingredients into a bowl and mix well.
Spread into a greased 22cm pie plate or 20 x
26cm lamington tin. Bake in a moderate oven
190 deg C for 35-40 minutes, or until set and

golden brown. Serve in wedges, either hot or
cold with a salad.
1 zucchini, grated (unpeeled)
1 carrot peeled and grated
3 eggs
500g good quality beef mince
1 teaspoon curry powder
¾ cup breadcrumbs (fresh or dried)
2 T Tomato paste
BBQ Sauce
Place all ingredients into a bowl and mix well with
hands (I use disposable gloves so I don’t get
meat all over my hands).
Press mixture into a loaf tin. Spread BBQ Sauce
over the top and cook in a 180 deg C oven for
about one hour or until browned on top.
Serve with your favourite sides – and the left-
overs are fabulous on sandwiches the next day!
