Cocktail of the month
This month we’re having a Japanese whisky special and as such, we hooked up with
mixologist Jamie McDonald at Edinburgh’s Bon Vivant, where he created this fresh and
revitalising cocktail, using Hibiki 17 Year Old Blended whisky.
Ingredients
37.5m Hibiki 17 Year Old
One whole peach (inc skin)
25ml fresh lemon juice
25ml egg white
10ml sugar syrup
3 small pieces of fresh honeycomb
Method
Add peach and honeycomb to mixing
glass and muddle then add egg white
and lemon juice. Dry shake before
adding ice and sugar syrup. Shake
again before single straining into a
traditional sour glass. Sprinkle fresh
honeycomb to garnish

Konnichiwa. That’s hello to you and I, but it’s a very fitting way to kick off our Japanese Whisky special.
Already acquainted with whisky from the land of the rising sun thanks to our spectacular cocktail of the
month, we decided to see how the whisky stood up on its own, or whether the Scotch-loving OTS team would
baulk at the drams on offer – which were Hibiki 17 year old blend and Yamazaki’s 12 and 10 year-old
expressions. All are Suntory brands distributed in the UK by the lovely folk at Cellar Trends.
After a gruelling half hour familiarising ourselves with the three whiskies we came to the collective decision
that all three could give Scotch a run for its money, and with such appealing packaging they are sure to be a
stand out on any bar. There had to be a winner though, and the Hibiki outshone its single malt counterparts,
something we put down to having a bit more time in the cask. As for the malts themselves, in a Run The
Gauntlet first, we had a tie – that’s the problem with having an even number of people in the office on the
day in question, but it was a fair result as neither outshone the other, with both offering fantastic flavours.
