Nadine Abensur was born in Morocco of French-Jewish parents so combine this with extensive travel and a career working in restaurants around the world, you
start to understand where the inspiration for her food comes
from. Nadine set up her own vegetarian catering company
Culinary Arts and had a wonderful clientele ranging from
Paul and Linda McCartney to Annie Lennox. For fi ve years
she was Food Director of the prominent UK vegetarian
restaurant group, Cranks. She has written 6 vegetarian
books, including the acclaimed “The Cranks Bible” (Cassell
2001)Now she divides her time between London and
Australia where she runs cookery courses whilst continuing
to write for BBC Good Food and Delicious.
The courses are designed for everyone from the keen cook
to the professional, and as I went through the recipe section
within the web site I found myself printing many of them
off to use later, such is the skill of Nadine that she helps
you create something wonderful very simply and of course,
nutritionally too. I tried out the home made baked beans
on my son, a true connoisseur of baked beans, and they
passed the test with fl ying colours. The recipe is now stuck
to the front of the fridge!
With more and more information within the media about the
effects of meat within our diets now is the time to really get
to grips on how to cook vegetarian. I know for many you may
fi n d the idea of being totally vegetarian slightly alarming, but
if you even reduced you intake down to one or two days a
week you would notice the difference, the secret is to fi nd
out, to learn, how to prepare healthy, appetising meals and
not to fall into the trap of assuming that all you will be eating is
jacket potato and salad for the rest of your life. I have served
up many vegetarian dishes, particularly to Spanish children,
who have not even noticed that the meat was missing!
If you cannot get to a course then do look at the books.
Again, written with passion and experience and they will
guide you through, you will be surprised just how easy it
can be.
The courses are fantastically varied, you can learn modern
Middle Eastern, detox foods, gluten free, simple Asian,
French, Italian in fact, whatever your favourite food is you
can create it in a vegetarian style.
This is a great web site put together by someone who really
understands the vegetarian diet and rather than look to
dictate on how you eat, Nadine simply puts her arm around
you and guides you through the options.
