Gluten-Free Mini-Cheesecakes
with Cherry Topping
(Makes 12 cheesecakes)
1 cup cooked quinoa
1 cup almond flour
1-½ cup natural sugar,
divided
1-½ teaspoon lemon
zest, divided
16 ounce low-fat cream
cheese
4 ounces egg substitute
1 teaspoon vanilla
1 cup pitted cherries
1 tablespoon cornstarch
Preheat oven to 375 degrees. Line 12 cupcake tins with paper
or foil cups.
Combine cooked quinoa, almond flour, ½ cup natural sugar
and ½ teaspoon lemon zest. Press 2 tablespoons into bottom of
each cupcake liner.
Whip cream cheese, ¾ cup sugar, egg substitute, vanilla and
1 teaspoon lemon zest until smooth and creamy. Spoon cream
cheese mixture evenly over quinoa mixture.
Bake for 15 minutes. Cool completely.
Mix cherries, cornstarch and ¼ cup sugar in a small bowl.
