Sausage Pasta
Salad
(serves 2)

5 veggie sausages, cooked and slicedCelery

Onion rings1 garlic clove, chopped1 tbs chives, finely chopped1 tbs parsley

1 tbs lemon juiceLots of black pepperSalt to tastefollow the paws
Cook the pasta according to theinstructions on the packet butadding the stock cube to thewater whilst it cooks.
Let pasta cool in a big bowl.
Add sausages, salad ingredientsand herbs.
In a separate bowl, mix theolive oil, vinegar
, lemon juice, black pepper and salt.
Pour over the other ingredients and mix well.

rm oil and add tofu. Coat tofu with
ginger
, coriander
, mixed herbs, cumin and stock. Gently turning at intervals, fry
until brown and crispy
.
Add the cashew nuts and all the vegetablesexcept the beansprouts and cook for 3-4 minutes.
Add the beansprouts and fry for a further 1 minute.
Meanwhile, cook couscous.
Add garlic to stir
-fry and serve with couscous.
Sausages but not a
