Rocking
Risotto
(serves 4)

almonds
1 vegetable stock cube225g bulghar wheat (see what
on earth?)

eady-to-eat dried apricots
4 sprigs of fr
esh parsley
salt and gr
ound black pepper
follow the paws
Cut the spring onions into pieces.
Gently warm the almondsin 1/2 a tablespoon of oiluntil they are golden.Remove from pan and place on kitchen paper to absorb any excess oil.
Fry the mushrooms and spring onions in 1 tablespoon of oil for 5 minutesor until they are soft. Stir often.
Dissolve the stock cube in 600ml of boiling water
Add the cracked wheat to the mushrooms and spring onions. Stir for oneminute.
Pour stock over mixture.

rn the heat up until it boils. Then reduce heat and put the lid on for 10
minutes.
Cut the apricots into small pieces. Add the apricots tothe bubbling mixture along with a little salt andpepper

ake the lid of
f the pan and let the mixture cook for a
further 5 minutes or until all the stock has been absorbed.
Break the stalks of
f the parsley and snip the leaves
into small pieces.
Stir the parsley and half of the flaked almonds into the mixture.
Sprinkle the rest of the almonds on top and serve immediately

rooted out in supermarkets.
It is made from wheat
which has been boiled,
dried and ground.
