Zucchini & Feta Fritters 700g zucchinis, coarsely grated 2 tsp salt 3 green shallots, thinly sliced 1 cup continental parsley, chopped 200g feta, coarsely crumbled ½ cup plain flour 3 eggs Freshly ground black pepper ⅓ cup olive oil
Add salt to zucchini in a colander, sit for 10 minutes, rinse & squeeze out excess liquid. Combine zucchini, shallots, parsley, feta, flour & lightly whisked egg in a medium bowl. Season with pepper. Heat oil in a frying pan over medium high heat. Drop tablespoonfuls of the zucchini mixture around pan & flatten slightly, cook 2 minutes each side or until cooked through, reheating oil between batches until all mixture is used. Serve with BBQd meat or casseroles & mashed potatoes.
COUNCILLORS IN CANOWINDRA Cabonne Councillors inspected a list of major projects completed recently in Canowindra after holding their July Committee meetings in the town on Monday 3 July 2012. Canowindra-based Councillors Kevin Walker and Anthony Durkin showed fellow Councillors and senior staff the sites of a number of completed and proposed projects. These included the resealed section of Nangar Road near the Moyne nursing home, the grey water dump facility for motor homes and campervans, the sealed road through Canowindra caravan park, the $350,000 refurbishment of the amenities building at Canowindra swimming pool and several other road sealing projects. Councillors also receiving a briefing on the planned $1.7 million redevelopment of the swimming pool, which will involve converting the existing 33 metre pool to a 25 metre lap pool, revamping the children’s pool and building a new beach-entry water play area.
The upgrade will also include the provision of additional shade areas, a club room, storage area, solar heating, plant upgrade, repairs to the concrete concourse and new fencing and landscaping. Consultants Lantz Marshall are expanding the concept plans into detailed documents for a development application and the Council is expected to receive the initial draft plans by the end of July. Other major projects include the resealing of Gaskill Street through the town’s shopping centre and the rehabilitation of a section of the Canowindra-Eugowra Road. Councillors also inspected several sites for a possible car park in the CBD. Monday’s meetings were held at the recently rebuilt Canowindra Services Club, which Mayor Bob Dowling described as an outstanding facility. “The fire that largely destroyed the original building was a tragedy because the club plays such a big part in community life in Canowindra,” Cr Dowling said. “However, the new club is a wonderful amenity and the board, members and staff should be very proud of the facilities that are now available.”
