Mediterranean Pockets ﬁlled

What you’ll need:
packed lunches. 2 Mission ‘Mediterranean Herb’ Deli Wraps
1 sweet potato, peeled sliced 5mm thick
With ﬁve fantastic ﬂavours to choose from, there are literally hundreds
½ red pepper, deseeded and cubed
of combinations to look forward to. And hundreds of ways to try them. 2 tbsp balsamic vinegar
Why not give your favourite ﬁllings a fresh new twist? Serve them hot,
½ yellow pepper, deseeded and cubed
4 tbsp olive oil
cold, sweet, savoury or spicy, make meals of them at breakfast, lunch
½ orange pepper, deseeded and cubed
or dinner, or create the perfect dessert.
1 jar sun-dried tomato pesto
1 white onion, sliced
1 bag rocket leaves
1 clove garlic, crushed
1 block of feta cheese
Salt and Pepper
How to do it:
1. Place the peppers and onions on a baking tray
and sprinkle with crushed garlic, salt and pepper
and 2 tbsp of olive oil.
2. Layer the sweet potato on another baking tray and
sprinkle with balsamic and olive oil.
3. Place both in the oven at 200°C for 20 minutes
or until the potato is soft.
4. Heat the Deli Wraps on a low setting in the
microwave for 20 seconds.
5. Spread a thin layer of tomato on the wraps,
place the rocket in the middle, top with some
peppers, onions and sweet potato, then sprinkle
with feta. Now fold in the bottom of the
wraps, then the two sides to form a pocket
with the ﬁlling peeking out of the top.
Serve and enjoy.
