For each square of “La India” chocolate, add a cup of milk. Let boil on medium heat until dissolved. Blend in blender or with a molinillo until foaming. Serve hot. Each bar contains 10 squares.

Para Hacer un Buen Chocolate

AMERICAN DREAMERS: Don Antonio Rodriguez (right) and his wife, Antonia Villarreal Rodriguez, immigrated to Laredo from Mexico in 1924 and set up their modest grocery shop on Marcella Avenue.

Choose from curried chicken salad and

menoodles — a healthier version of menudo — or grilled chicken and fajita plates with veggies, curry chicken salad sandwiches, curry tuna salad stuffed avocados, beer-can rosemary mesquite grilled chicken, made-from- scratch mole, loaded tostadas and other grilled favorites. Can’t decide? The Tasting Room sampler plate might be for you. And be sure to leave room for dessert. Tangerine and lime pie, Sofia’s flaxseed cloud, Mexican sugar and cinnamon cookies, arroz con leche, and pineapple empanadas beckon, complete with a cup of authentic La India hot Mexican choco- late.

CITATION OF HONOR:

In 2014 La India was presented with the Texas Treasure Business Award from the Texas Historical Commission, honoring its 90 years in business — four decades longer than the half-century requirement for the recognition.

Even short-term visitors can easily work an

afternoon cooking class into a limited itinerary. Step back into the cozy classroom with its red jute table covers, quilt-adorned walls and glazed crockery, and leave with new ways to prepare traditional dishes — chile con carne with a chorizo flair or a vegetarian “shroomizo” option for a healthier twist. Students can also learn how to make their own herbal remedies. As you work, see if you don’t spot, as Elsa did one needful day, a blessing keeping watch over your efforts. Third-generation co-owners and siblings

Arguindegui, Grace Rodriguez Hernandez and Ruben Rodriguez continue to run this delectable slice of Laredo in the way Antonio y Antonia envi- sioned it, all those years ago.
