Baked Catfish

INGREDIENTS 1 egg or 2 egg whites 2 T. milk ½ c. cornmeal mix ¼ tsp. paprika ¼. Tsp. salt ¼ tsp. onion or garlic powder ½ tsp. black pepper ¼. C olive oil 2 catfish fillets


DIRECTIONS


Mix eggs and milk together; set aside. Mix cornmeal, salt, pepper and paprika together. Coat baking dish with spray oil; coat fish with olive oil. Dip fish fillet in corn meal mixture and then into egg and milk mixture and then into the cornmeal again. Place fillet in baking dish. Heat oven to 500°F. Bake for 15


to 20 minutes; no longer. Fillet will be flaky. Vegetable Salad

INGREDIENTS 1 can mixed vegetables, drained celery stalks, chopped 1 can whole kernel corn ½ c sugar


1 onion, chopped ¼ c. salad oil 1 bell pepper, chopped ½ c. vinegar


DIRECTIONS Mix together all vegetable in a large bowl. Bring sugar, oil and vinegar to a boil. Pour liquid mixture over vegetables. Refrigerate.
