It’s always piping hot when they bring it out.” The chicken is all prepared in the kitchen, going from the refrigerator, to the batter, to the fryer and out to the customer within 20 minutes. The batter has its own secret ingredient to give it that unique Eischen’s flavor. The kitchen also serves okra and other Eischen’s classics in- cluding chili, nachos, roast beef and barbecue sandwiches. The chicken and okra are served family-style, coming out in paper serving trays with wax paper for plates. The serv- ing method and seating encourages customers to bring the family out for a meal together. “The atmosphere is very homey and kid-friendly,” cus-
