Overnight Oats Serves 4


Tips


✓ Label each bag with the contents and cooking instructions before adding the ingredients to the bag.


✓ To minimize messes, add liquid ingredients to the bag last.


✓ Seal the top of your slow cooker liner with a twist-tie. If you don’t have slow cooker liners on hand, zip-top bags will work too—just empty the con- tents of the zip-top bag into the slow cooker before cooking.


✓ Freeze the bag inside a container smaller than your slow cooker so that it will fi t into your slow cooker while still frozen.


✓ The sauce produced by the slow cooker will be thin. If you prefer a thicker sauce, transfer the liquid to a saucepan and simmer to reduce.


✓ Cooking times may vary based on your slow cooker.


✓ Double the recipes and prepare twice the number of meals in about the same amount of time!

✓ 1 ½ cups steel cut oats ✓ 6 cups water ✓ ¼ cup dried cranberries ✓ ¼ cup slivered almonds ✓ 1 teaspoon almond extract ✓ ¼ cup brown sugar


Place oats, water, cranberries and almonds into a slow cooker and cook for 6 to 8 hours on low. Before serving, stir in the almond extract and brown sugar to taste.


Breakfast Burrito Bake


Breakfast Burrito Bake Serves 4


✓ 4 eggs ✓ 1 cup milk ✓ ¼ teaspoon black pepper ✓ 8 ounces spicy breakfast sausage ✓ ½ medium onion, chopped ✓ 4-ounce can green chilies ✓ 1 cup shredded cheddar cheese ✓ 6 6-inch fl our tortillas


In a medium bowl, whisk together the eggs, milk and pepper. In a large skillet, brown the sausage; drain and set aside. Add the onion and green chilies to the skillet and cook over medium until the onion is tender. Add the sausage and ½ cup of the cheese to the onions and green chilies. Place 1/3 cup of the sausage mixture in the middle of each tortilla, roll them up and arrange them in an 8-inch- square baking pan. Pour the egg mixture over the tortillas. Top with the remaining ½ cup of cheese. Cover with foil and refrigerate overnight. In the morning, preheat the oven to 350°F. Remove the foil and bake for 20 to 25 minutes, until the eggs are set. Serve with salsa and sour cream.
