The Background: This Solis Hotels’ property traces its roots back to the 1400s but the current building was built in the 1860s, destroyed by fire in 1939 and then lovingly renovated. Where Is It? Near Donegal Town, in northwest County Donegal, the castle is set on the shores of the lough (lake), between the rugged Blue Stack Mountains and Donegal Bay with its sandy surf beaches and the sweeping cliffs of Slieve League. The Room: My top-end Garden Suite was opposite the spa. These are 900-1000 sq ft. in size, decorated in rich, warm furnishings and have heated tile floors, a gas fire, cosy sofa, king-size four-poster beds and huge bathrooms with a separate bath and

shower. There are rooms/suites in the main building and the lead-in Courtyard rooms are in the old stables. Dining: Cedars Grill Restaurant serves up a contemporary, unfussy menu of hearty local food such as salmon, smoked on the premises, or pork cutlet with whiskey glaze. Facilities & Activities: I enjoyed a salmon smoking demo from the chef, had


a facial and relaxed in the spa’s hot tubs and pool and then wandered the gorgeous gardens. I cycled around the beautiful Lough Eske and tried some fun team- building activities. Other options include archery, history tours, fishing and four championship golf courses nearby. Recommend To: Couples. Weddings are rightly popular in this romantic castle. The Cost: Rooms from £185. Verdict: The exceptional warm Irish hospitality here is very special. From the moment you enter, the smell of peat fires and the oak/stone interiors envelop you. There are cosy nooks from where you can watch the rain lash the leaded windows with a Guinness; then when the sun comes out you can explore the green, mossy grounds. Laura Gelder
