HOT PLATES 

Not to be confused with the small plug-ins used for illicit dorm room cooking, gas hot plates are serious cooking equipment. These versatile, compact appliances add general cooking flexibility to almost any type of foodservice operation. They can be used for sautéing, pan broiling, stewing and frying.

Gas-fired hot plates are basically smaller restaurant range tops. The countertop versions offer most of the cook top variations found in a good range line including: multiple open burners, hot tops, griddle sections, and broilers.

Grates made from steel or cast iron support the pots or pans above the gas burners. The open gas flame impinges directly onto the bottom of the cooking vessel providing even, consistent heat. Each burner may have its own individual grate, or in some cases, the entire top of the unit may be made of bar-type grate sections. New gas burner technology has been designed to conserve energy by triggering individual burner ignition when a pot or pan is placed on the burner and to turn off when the pot or pan is removed.

Gas-fired hot plates are generally supported by two- to four- inch legs that provide stability and facilitate cleanup. This type of countertop installation enables operators to use the valuable space under the counter for other purposes such as refrigeration or dry storage.

Gas hot plates have an added element of versatility because they can be used indoors or outdoors. For this reason they are a popular choice for caterers, but they are also used in commercial kitchens to save valuable space.

The hot plate’s visible gas flame provides chefs with the high degree of temperature control they prefer. And with natural gas’s instant on/off performance, no preheating or cool-down time is required.
