He wanted a ‘wow’ dish and decided to try beef wellington. ‘I was nervous about getting it exactly right,’ he admits. ‘It’s easy to overcook the meat, so I was very relieved when I cut into it and could see it was still rare.’ Lucy looked after the vegetables and made the
custard to serve with the crumble. ‘I like spoiling guests and there’s nothing like homemade custard,’ she says. ‘I make it so it’s not too thick and it works brilliantly with summer berries.’

Buying locally made produce is important to both Lucy and Michael and that infl uenced their wine choices. Lucy says: ‘Denbies wine estate is just round the corner in Dorking so you can’t get much more local than that. I’m a big fan of their wines.’
