The grapes were sourced from the Coastal region to acquire the different dimensions contributed by the various terriers it was collected from.
The winemaking
Grapes from selected vineyards in South Africa's Coastal wine region were harvested when the grapes were showing maximum flavours and ripe grape tannins. The grapes were harvested by hand during February and March at 24° - 25° balling. The juice was fermented on the skins for four days, and after pressing fermentation continued in stained steel tank. Upon completion of malolactic fermentation, 20 % of the wine matured in stainless steel tanks with French oak staves.
