The soaring peaks of the Simonsberg Mountain have long served as a guardian to the birth, renaissance and continuing triumph of Plaisir de Merle. Strict adherences to harmonious integration of vineyard practice with modern wine-making techniques have left renowned cellar master, Niel Bester, free [Q influence the wine-making process.
