Winemaking The trellised vineyards are located in the Breede River Valley in the Western Cape. Vigorous bunch selection was done through hand harvesting and grapes were harvested close to daybreak to preserve maximum fruit and acidity. At the cellar the grapes were destemmed, crushed and cooled through a mash cooler. The free run was cooled down further to 11°Cand allowed to settle for 48 hours after which it was racked to stainless steel tanks, inoculated with selected yeast and allowed to ferment between 12-14°C. Fermentation was completed in 21 days and the wine was left on the lees for a further 14 days after which it was racked and lightly sulfured. Prior to bottling the wine was protein and cold stabilized and filtered
