Canadian acquisition Oz goes Italian


gategroup’s purchase of Cara Airline Solutions will establish its core brand Gate Gourmet as a major player in the Canadian airline services market, where it currently does not have a presence. A part of Cara Operations Limited, Cara Airline Solutions operates 10 facilities and nine kitchens at some of Canada’s busiest and largest airports and achieves annual revenues of approximately CHF 200 million. It serves some 55 Canadian and international airline and rail customers, including Air Canada, Air Transat, Jazz, British Airways, Air France, Air China, Jet Airways, China Airlines, and VIA Rail Canada, Canada’s national passenger rail service. It employs around 2,800 people and has operations in Calgary and Edmonton, Alberta; Halifax, Nova Scotia; Montréal and Québec City, Québec; Ottawa and Toronto, Ontario; Regina, Saskatchewan; Vancouver, British Columbia; and Winnipeg, Manitoba. Canada has a strong low cost airlines market as well as rail travel where branded products play an important role. AIP (Authentic Imported Products) Asia Pacific was formed in June 2010 by Rudy DePaola (Strictly From Scratch and AIP), Dave Campbell (dPLANE Stuff and AIP) and Sydney-based Cameron Woodward. It will coordinate sales and logistics activities


for US-based AIP (Authentic Italian Products), along with representing the same companies that AIP does currently, plus food products from its partner company Strictly From Scratch. Other companies will be added in the future. The company will be importing food products such as AR Alimentare pizzas and Castello Monte Vibiano olive oils and dressings from Italy along with other food products from the USA, and will distribute to airlines and caterers in Australia, New Zealand and the South Pacific. It intends to expand into the Australian and NZ retail and foodservice markets as opportunities are found. It has set up third party warehousing and logistics in Sydney for shipping frozen and ambient products to the rest of Australia, and will be doing the same in New Zealand in the near future. AIP Asia Pacific will also be selling the line of equipment available through SFS Distribution/ dPLANE Stuff, and other new products. Royal Caribbean International’s Allure of the Seas cruise ship will introduce new culinary concepts and twists to signature Oasis-class restaurants, starting in December. A Brazilian steakhouse will be open for dinner


in the Solarium, featuring authentic Brazilian-style meats and seafood dishes, served table-side and sliced straight off the skewer. In Central Park, recently appointed chef de cuisine Molly Brandt will give guests a distinct fine dining experience, with a tasting menu and customised wine pairings. Overall, guests will have a new range of dining experiences throughout the ship, from the Adagio main dining room to new venues on the Boardwalk and Royal Promenade. Combining the best of classic Mexican beach bars and Southern California’s famed taquerias, Rita’s Cantina will be a vibrant new restaurant in the Boardwalk neighbourhood. Also new to Boardwalk will be The Boardwalk


Dog House, an outdoor hot-dog counter. Other features are Giovanni’s Table, an Italian trattoria with both indoor and alfresco seating featuring Italian classics; Park Café, an indoor/outdoor gourmet market featuring salads, sandwiches, soups, pastries and much more; Vintages, a wine bar with pre-dinner tapas and cheeses along with a selection of fine wines; Chops Grille, Royal Caribbean International’s signature steakhouse. The 225,282 gross ton Allure of the Seas will span
